Wholefood Cake

This tastes a little like a Christmas cake but less sweet.

The flax or chia help to bind it, and the vinegar with bicarb at the end react together to make it rise. Enjoy!

Ingredients

  • 2 tbsp cider vinegar
  • 2 tbsp ground almonds
  • 5 tbsp buckwheat or oat flakes
  • 3 tbsp gram or pea flour
  • 1 tbsp whole flaxseed or chia seed
  • 3 tbsp dried fruit
  • 1 tbsp mixed spice
  • 1 tbsp chopped walnuts
  • 1 tbsp molasses
  • 1 satsuma, juice and pulp added, then finely chopped peel added
  • ½ tsp bicarbonate of soda added at the end.

Instructions

  1. Throw everything in a bowl except the bicarb, then mix well (use water or plant milk to mix to batter consistency). Once mixed, add bicarb and stir quickly before pouring into a baking tray, then bake for one hour in a medium oven until firm to touch on top.
