Banana Bites

Ingredients

  • 850-900g Banana (approx. 9 very ripe bananas)
  • 30g Ceylon cinnamon
  • 5g Vanilla extract
  • 1g Salt
  • 300g Jumbo rolled oats
  • 100g Dark chocolate chips (or Cacao nibs)

Instructions

  1. Peel your bananas into a bowl and mash with a fork, this step takes drastically different times depending on the ripeness of your fruit, mix until a smooth, wet, paste. Yummy
  2. Add in cinnamon, salt, and vanilla extract, mix with the same fork or a whisk until incorporated
  3. Add in your oats, it will look like a lot, it is
  4. Use a baking spatula to mix together until incorporated, smooth over the surface and leave in the bowl for at least 10 minutes for the oats to soften. This is a good time to pre-heat your oven to 180 deg C
  5. Prepare a baking parchment wrapped baking tray 6. Using two table spoons, form the mixture into quenelles (curves sausage shaped things, see future recipe reel video for a demonstration, or search the term online). Place each quenelle on the tray
  6. Bake at 180 deg C for 25 minutes
  7. Remove from the oven and attempt to use a thin spatula to lift a banana bite from the tray, if it it sticking leave to rest for up to 10 minutes and try again
  8. Move all the bites only a cooling rack, if you don't have one you can just flip them over so the flat bottoms have chance to air dry
  9. After at least 15 minutes of cooling they are the perfect texture for scoffing!

Notes: You can replace the dark chocolate chips with cacao nibs, or dried fruit, but this small amount of chocolate relative to the large recipe really lets this overall healthy dish satisfy that chocolate craving much more so than the quantity suggests. Keep in an airtight container and consume within 4 days, they will lose their crisp surface texture after the first day but they are still great.
